Since the opening of Refettorio Ambrosiano, Milan in 2015, founders Chef Massimo Bottura and Lara Gilmore have been empowering and mobilizing local communities to reduce food loss and waste and social isolation. Launched in 2016, the mission of Food for Soul takes aim to change our behavior in how we value, respect and nurture our food system, fostering health, sustainability and equity outcomes through the sharing of knowledge and development of Refettorio projects around the world. A Refettorio is a community hub centered around daily food initiatives that actively reclaim food surplus transforming ingredients into nourishing meals for those socially vulnerable and experiencing food insecurity. Each Refettorio programming is specific to the local needs of the community while consistently offering unique food, art and culture activities to stimulate social, economic and environment resilience, civic engagement and stewardship. Through nonprofit collaborations, the organization has launched eight Refettorio projects worldwide in Milan, Modena, Naples, Bologna, London, Paris, Rio de Janeiro and Merida; and is underway for it's most recent openings in the USA in San Francisco and Harlem.

EBMRF is the only all-volunteer, nonprofit funder of research for Epidermolysis Bullosa (EB), a rare and life-threatening disease of the skin. The EBMRF currently funds studies at major universities including Stanford, University of Minnesota, and USC.
